These Crispy Spring Rolls are the ultimate crowd-pleasing appetizer — golden, crunchy on the outside and packed with a savory, flavor-loaded vegetable and meat filling on the inside. Made with thin spring roll wrappers and deep-fried to perfection, every bite delivers that satisfying crunch that everyone loves. The filling is a delicious mix of shredded cabbage, carrots, glass noodles, and seasoned ground pork or chicken, all stir-fried with aromatic garlic, ginger, and soy sauce. Serve them piping hot with a sweet chili dipping sauce and watch them disappear within minutes. Perfect for parties, game nights, or as a starter for any Asian-inspired meal.

Ingredients

For the Filling:

  • 200g (7 oz) ground pork or chicken (or use tofu for vegetarian)
  • 1 cup green cabbage, finely shredded
  • 1 cup carrots, julienned or grated
  • 1/2 cup bean sprouts
  • 1/2 cup shiitake mushrooms, finely chopped
  • 50g (1.7 oz) glass noodles (cellophane noodles), soaked in warm water and roughly chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 2 green onions, finely sliced
  • Salt and white pepper, to taste
  • 1 tablespoon vegetable oil (for stir-frying)

For Rolling:

  • 20 spring roll wrappers (8-inch / 20cm square)
  • 2 tablespoons cornstarch mixed with 3 tablespoons water (as a sealing paste)

For Frying:

  • Vegetable oil, for deep frying (enough for 2–3 inches in pot)

For Serving:

 

  • Sweet chili dipping sauce
  • Soy dipping sauce
  • Fresh lime wedges

Instructions

  • Soak the glass noodles in warm water for 10 minutes until softened. Drain and roughly chop into 2-inch pieces. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the minced garlic and grated ginger; stir-fry for 30 seconds until fragrant.
  • Add the ground pork or chicken and cook, breaking it apart, until fully browned — about 4–5 minutes.
  • Add the cabbage, carrots, mushrooms, and bean sprouts. Stir-fry for 2–3 minutes until the vegetables are slightly softened but still have a bite.
  • Add the chopped glass noodles, soy sauce, oyster sauce, sesame oil, green onions, salt, and white pepper. Toss everything together for 1 minute. Remove from heat.
  • Transfer the filling to a baking sheet or large plate and let it cool completely. This is essential — a hot filling will make the wrappers soggy.
  • To roll: lay a spring roll wrapper on a clean surface in a diamond shape. Place 2 tablespoons of filling in the center lower third.
  • Fold the bottom corner over the filling, then fold in both side corners tightly. Roll upward firmly. Dab the top corner with the cornstarch paste to seal. Repeat with all wrappers and filling.
  • Heat oil in a deep pot or wok to 175°C / 350°F. Fry the spring rolls in batches of 4–5 for 3–4 minutes, turning occasionally, until deeply golden and crispy.
  • Remove with a slotted spoon and drain on a wire rack or paper towels.

 

  • Serve immediately with sweet chili sauce and lime wedges

Notes

  • Always let the filling cool completely before wrapping — warm filling creates steam, which makes the wrappers burst or go soggy.
  • Keep unfried spring rolls covered with a damp cloth to prevent the wrappers from drying out.
  • To bake instead of fry: brush spring rolls with oil and bake at 200°C / 400°F for 20–25 minutes, flipping halfway, until golden. They won’t be as crispy but are a lighter option.
  • To freeze: arrange unfried spring rolls on a tray, freeze until solid, then transfer to a bag. Fry from frozen, adding 1–2 extra minutes to the cook time.

 

  • For a fully vegetarian version, replace meat with extra mushrooms or crumbled firm tofu and swap oyster sauce for hoisin or vegetarian stir-fry sauce.
