These Loaded Nachos Supreme are the ultimate sharing appetizer — a gloriously generous mountain of crispy tortilla chips layered with seasoned ground beef, three types of cheese, smoky refried beans, pickled jalapeños, and finished with all the best toppings: cool sour cream, chunky guacamole, fresh pico de gallo, and a drizzle of hot sauce. Every chip is loaded, every bite is different, and the whole thing is built in one oven-safe dish and ready in just 25 minutes. Perfect for game day, movie night, parties, or any time you want to feed a crowd with zero fuss and maximum flavor.

Ingredients

For the Base:

  • 300g (10 oz) tortilla chips (thick-cut, restaurant-style)
  • 1 cup refried beans (canned)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (or mozzarella)
  • 1/2 cup shredded pepper jack cheese

For the Seasoned Beef:

  • 300g (10 oz) ground beef (80/20 blend)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons water

For Toppings (added after baking):

  • 1/2 cup sour cream
  • 1 cup guacamole (store-bought or homemade)
  • 1 cup fresh pico de gallo or salsa
  • 1/4 cup pickled jalapeño slices
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Hot sauce, to taste

Optional Extras:

 

  • Sliced black olives
  • Corn kernels
  • Diced red onion

Instructions

  • Preheat your oven to 200°C / 400°F. Line a large baking sheet or oven-safe skillet with parchment paper or foil.
  • Cook the seasoned beef: heat olive oil in a skillet over medium-high heat. Add ground beef and cook, breaking it up, for 5–6 minutes until browned. Drain any excess fat.
  • Add garlic powder, onion powder, cumin, chili powder, paprika, salt, pepper, and 2 tablespoons of water. Stir and cook for 1–2 more minutes until fragrant and saucy. Set aside.
  • Warm the refried beans in a small saucepan or microwave until spreadable.
  • Spread half the tortilla chips in an even layer on the baking sheet. Top with half the refried beans (dolloped or spread), half the seasoned beef, and half of all three cheeses.
  • Add a second layer of chips, then repeat with the remaining beans, beef, and cheese.
  • Bake in the preheated oven for 10–12 minutes, until the cheese is fully melted, bubbly, and starting to turn golden at the edges.
  • Remove from the oven and immediately top with pickled jalapeños and green onions.
  • Add dollops of sour cream, guacamole, and pico de gallo across the top.
  • Sprinkle fresh cilantro and a drizzle of hot sauce.

 

  • Serve immediately straight from the pan.

Notes

  • Build in layers — the key to perfect nachos is making sure chips in both layers get cheese and toppings, not just the top.
  • Always add cold toppings (sour cream, guacamole, pico de gallo) after baking, never before — they’ll melt or get soggy in the oven.
  • For best results, use thick, restaurant-style chips — thinner chips can break under the weight of toppings.
  • Swap ground beef for shredded chicken, ground turkey, or black beans for different variations.
  • Serve straight out of the oven — nachos don’t hold well as leftovers once assembled, as the chips will soften.

 

  • For a spicier version, use hot salsa, extra jalapeños, and add a pinch of cayenne to the beef seasoning.
